Garam masala

Garam masala is a staple spice blend in Indian cooking. Purists will complain that it is really better to grind it yourself for freshness, but if you are in a hurry you can buy it prepackaged in Indian grocery stores, or I have heard good things about the version produced by Frontier that is available in bulk at Whole Foods (which at least has the advantage that you can buy only what you need). We usually use this version by Madhur Jaffrey.


  • Seeds of 8 cardamom pods
  • 7 tsp black peppercorns
  • 2 Tbsp whole cumin seed
  • 4 tsp whole coriander
  • 1 stick cinnamon
  • 2 cloves


Grind to a fine powder in a spice grinder. Store in a tightly covered container in a cool place.
