Coconut Macadamia Cookies

Ingredients
- 1 cup butter, softened
- 1 cup brown sugar, well packed
- 1/2 cup sugar
- 2 eggs, at room temperature
- 1 tsp vanilla
- 2 1/4 cups flour
- 1 tsp baking soda
- 1 cup unsweetened shredded coconut
- 5 oz macadamia nuts, plus 15-20 more for topping (optional)
Directions
Cream together the butter and sugars. Mix in the eggs one at a time and then the vanilla. Stir the baking soda into the flour and then mix into the butter/sugar/egg mixture. Mix in the coconut and coarsely chopped macadamia nuts. Spoon onto cookie sheet, allowing 2 inches of separation for expansion. Bake at 360˚ for about 9 minutes, until lightly browned. Allow to rest for one minute before removing to cooling racks. Press a piece of macadamia (1/3 or 1/4 of a nut, corner down) into the center of each cookie while they are still warm.
Makes about 55.
